When it comes to budgeting meals, we don’t want to believe that tasty dishes can be really cheap and it is possible to eat them for a couple of days. We cook the same old things over and over again and don’t even try to experiment. Let’s change everything and today I recommend you to cook a Vegetarian Lasagna with Pesto that will cost not more than $16.00. Are you with me?

You will need:

1 1/3 cup freshly grated parmesan cheese

pepper and salt to taste

1 cup pesto sauce

2 pounds asparagus

garlic

1 pound no-bake lasagna noodles

How to cook:

Before cooking the meal you have to preheat the oven to 400 degrees F. Then put a large bowl halfway with ice, and add cold water to cover the rice. Leave the following products aside.

Cook the asparagus and set it aside.

Then combine cheese together with the garlic and salt and pepper.

Take a 8×8-inch square casserole pan, spread some oil on its bottom and place enough lasagna noodles on the bottom to cover. Afterwards use 1/3 cup of the ricotta mixture, then 1/3 cup of the pesto and a thin layer of the asparagus. Put a bit of parmesan cheese on the top of the asparagus. Repeat this process for 2 more times.

Cover your lasagna with foil and cook for 30 minutes covered.
